Needed a quick appetizer one Holiday and threw these together and everyone was raving about them and they were super simple to make. So I tested to get measurements so I could write a recipe and it turned out awesome. This recipe is so versatile and can be spiced and seasoned how ever you like. I've thought about doing an Asian style version or even a BBQ Bacon Shrimp cake recipe.
I started the recipe with frozen, raw, peeled and deveined shrimp. You can buy any raw shrimp you like, the recipe measurements are for 12 ounces of raw shrimp but it is easily increased to make more cakes. Just make sure the shrimp in thawed and clean before adding to the food processor.
The spices I used were very simple but you can use anything you like to spice up the shrimp cakes. I always suggest to season, mix and cook a tester to taste for seasoning. I used salt, pepper, paprika, garlic, onion and cajun plus some lemon juice to give some acidity. You can also add herbs or vegetables to the mix like green onions, peppers or chopped onions.
The binders I used was mayo, an egg and pork panko bread crumbs. You need quite a bit of the pork panko because it isn't very absorbent. Alternatively you can use a little bit of almond flour or coconut flour. I'd start with 1/4 Cup of almond flour or 1 Tbs. of coconut flour and adjust until a thick paste forms that you can scoop and pan fry.
I fried in just a spray of avocado oil but you can use anything you want. It would be good fried in a little bit of bacon fat or butter, whatever you like. You can get 5 burger size patties or 24 mini cakes for appetizers. I use portion scoops to easily portion out the cakes, it makes it very easy to fry them up. The shrimp burgers I ate on my low carb hamburger buns with a spicy mayo, lettuce and tomato and they were delish!

DIPS:
There are many options for dips of spreads for these shrimp cakes. You can use a base of mayo, sour cream or greek yogurt then spice how ever you would like. For the most recent party, I was out of mayo so I did greek yogurt with lemon juice, salt, pepper, paprika, cayenne, garlic and onion. I made it a little bit spicy to compliment the sweetness from the shrimp in the cake. There are also many low carb sauce options on the market you can use!
Shrimp Cake Recipe
12oz. Raw Shrimp
2 Tbs. Avocado Oil Mayo
1 Tbs. Fresh Lemon Juice or a few true lemon packets
1 Egg
1/4 tsp. Paprika
1/4 tsp. Pepper
1/4 tsp. Salt
1/4 tsp. Granulated Onion
1/4 tsp. Granulated Garlic
1/4 tsp. Cajun
1 & 1/4 Cup Pork Panko Crumbs about 50g (or small amount of almond or coconut flour, coconut flour is 3x as absorbent as almond)
*You may need more salt if you are not using the pork rinds as the binder
Instructions:
These come together incredibly fast so have your accompaniments ready before starting the mixture or before frying them off
If using frozen shrimp, defrost in cold water and make sure they are clean and well drained before adding them into the food processor
Once the shrimp is in the food processor add all the rest of the ingredients and blitz until just coming together in a cohesive shrimp mixture
Place a sauté pan on medium heat and spray or add a bit of oil just to aid in browning the cakes, at this point you can fry off a little piece to taste for seasoning because everyone's tastes are different
Once you are happy with the seasoning, scoop (portion scoops are easiest) the shrimp cake mixture onto the pan and squish down flat with you fingers or the back of the scoop, can also pre-scoop onto a plate, wrap and have ready to fry up the next day
Cook until the outside of the cakes are a little golden brown and the inside is cooked to 145 degrees Fahrenheit
Transfer to a plate and add dip or place on a low carb bun or wrap with a spread and veggies and enjoy!
