Keto Vanilla Cupcakes!!!

This Keto Vanilla cupcake recipe came about from my keto red velvet cupcake recipe, so if you would like to check out the procedure on how to make them check out the video here ( https://youtu.be/Q7c-DuGi4NM ) It is the most moist, fluffy keto cake I have figured out so far and only 1 Net Carb per cupcake.




I decorate and top mine with a keto buttercream frosting which I made in my keto sugar cookie video ( https://www.youtube.com/watch?v=K5uLQh_imVg ) if you want a chocolate buttercream just add cocoa powder to the buttercream. Then I just make them pop a little with a tiny sprinkling of keto sprinkles! (https://youtu.be/jX97ZVkuEdE ) could probably also put some in the batter for funfetti cupcakes!!


I used butter for this recipe but you can swap it out for avocado oil just like in the red velvet cupcake recipe. You only need 5 ounces though, which is a 1/2 Cup plus 2 Tbs. instead of the 12 ounces for the red velvet because there are less dry ingredients in this recipe.


I used granular monkfruit/erythritol blend, you can use straight erythritol (swerve) if you want. I just started experimenting with bocha sweet so not sure how well if works in baked goods yet. Allulose makes baked goods almost too soft and squishy, it may never feel fully cooked even. You can try doing a half and half like in my brownies but this recipe is already soft and moist without the added allulose. Using a straight stevia or monkfruit wouldn't work to just swap out you would have to use a lot less and would need to make up the difference with some dry ingredients to make the recipe turn out.


I use a vanilla whey protein isolate for this recipe, Isopure adds a little extra sweetness and vanilla flavor for no extra carbs. Plus I think it makes for a fluffier baked good. If you only have unflavored you can use that and add a little bit of vanilla stevia to make up for the lack of sweetness and vanilla flavor. If you have any kind of flavored protein powder you could use it, the cupcakes will just have that flavor, like a snickerdoodle or salted caramel. I've used Perfect Keto and Keto Chow protein powders in baking and they both work. I've also heard Quest protein powder works also. Just be aware they may change the carb counts for the finished product. I've had subscribers also say pea protein works if you don't want to use whey.

Keto Vanilla Cupcake Recipe


5 oz./10 Tbs./140 g Butter (If using unsalted add 1/2 tsp. salt)

180 g/ 3/4 Cup + 3 Tbs. Granular Sweetener

4 Eggs (room temp)

1 Tbs. Vanilla Extract

10 oz./1-1/4 Cup Homemade Buttermilk-Alternative milk (I used so delicious coconut milk)+ 2 tsp. Vinegar

120 g/about 4 scoops Vanilla Whey protein Isolate

75 g/1/2 Cup+2 Tbs. Coconut Flour

1 tsp. Xanthan Gum

1 tsp. Baking Powder

1 1/2 tsp. Baking Soda

2 tsp. Vinegar (I use apple cider)


Instructions:

  1. Preheat oven to 350 degrees and line 24 cupcake pan with liners and make your buttermilk

  2. Weight/measure the butter into a large bowl or stand mixer bowl, weight/measure the sweetener into the bowl and whip until light and fluffy, scraping down several times

  3. While that is whipping weigh/measure, sift and whisk together dry ingredients

  4. Once the butter and sweetener are light and fluffy add one egg at a time, scraping down after each addition

  5. Add vanilla extract to buttermilk then alternate the buttermilk and dry ingredients in 3 additions, scraping down in between each addition, whip until well combined and smooth

  6. Measure out the baking soda into a bigger vessel than you think you will need and add the vinegar (it will bubble up) mix well then add to the batter and fold in with a spatula, making sure it is mixed well

  7. Portion out into 24 cupcake liners, filling about 3/4 of the way up and bake for 17-20 minutes turning half way through to promote even cooking

  8. Let cool to the touch then move to a wire rack to cool completely while you make the frosting


Macros for 1 cupcake without frosting which just adds fat and calories, no extra carbs
