Keto/Low Carb Strawberry Sweet Rolls

This recipe started with my Ultimate Keto Cinnamon Roll Recipe, so there are many details and explanations for the flours and other ingredients I used in that recipe in that blog post- https://www.ketoupgrade.info/post/the-ultimate-real-keto-cinnamon-roll . For this blog post I will be highlighting the things I've learned with switching the fiber and the filling.




For the strawberry filling, I cooked frozen strawberries until they were as thick as possible to remove as much moisture as possible. I then added the sweetener to the reduced strawberries, once they cooled, to make a spread for the dough. Next time I may add softened butter, just like with the cinnamon roll filling. You can't go wrong with adding some extra fat to keto baked goods. This was really soft as is but adding more fat would add more flavor and more moistness to the roll. I used a granular sweetener for this recipe, I wouldn't use allulose because allulose burns very easily as a high temperature. And these rolls get brown all around in the time it baked without using allulose.





In this recipe I experimented with subbing the bamboo fiber with oat fiber. I ended up using 10 more grams of oat fiber than the bamboo and it would have been much easier to use even more. The roll was extremely soft and stick and hard to cut into rolls. The trick to this roll is to only add as much "flour" as needed to make a not too sticky dough that will hold it's shape when rolled. The more "flour" you add the more dense and dry the outcome will be. So even though bamboo fiber is expensive, I definitely recommend it for this recipe over the oat fiber. There are some of my recipes I have tried with bamboo fiber instead of the oat fiber and didn't like the outcome as much. So they each have a place in my keto pantry for different recipes.


If the dough is sticky with the oat fiber then you can also sprinkle extra xanthan gum on top of the dough in the mixer and mix the crap out of it to get it incorporated. I have found different xanthan gums are different strengths, so that can be a tricky part of this recipe as well.



If you use more oat fiber than I did, yours should hold their shape better!!!

Keto/Low Carb Strawberry Sweet Rolls


DOUGH:

8 oz./1 Cup Heavy Cream (Or Alternative low carb milk) Warmed between 100-110 degrees

6 g/2 tsp. Inulin (Alternatively 1 tsp. Honey or Maple Syrup)

9 g/2-1/4 tsp. Active Dry or Rapid Rise Yeast

4 Eggs

48-96 g/1/4-1/2 Cup 1:1 Alternative Granular Sweetener (add more bamboo fiber if using less than 96g of sweetener)

112 g/4 oz./1 Stick Salted Butter (melted) (add 1/2 tsp. salt if using unsalted)

110 g/1-1/4 Cup+2 Tbs.(approximately) Packed Unflavored Whey Protein Isolate

30 g/1/4 Cup Coconut Flour

44 g/2/3 Cup (scooped not packed) Bamboo Fiber (if using Oat Fiber add 65g/2/3 Cup)

12 g/1 Tbs. Baking Powder

12 g/1 Tbs. Xanthan Gum (more or less depending on the brand)

25 g/2-1/2 Tbs. Grass fed Beef Gelatin (more if using pork gelatin)


FILLING:

8oz- Fresh or Frozen Strawberries

62 g/1/3 Cup Granular 1:1 Alternative Sweetener

1 tsp. Strawberry Extract


Instructions:

  1. Place strawberries into a pot an cook on low until thick and most of the moisture is gone, may need to mash them, I ended up with only 3.5 oz. left after I cooked it down, when it's done place in a new container to cool in fridge or freezer

  1. While that is cooking, weigh/measure out your liquid and heat to between 100-110 degrees Fahrenheit then add the inulin and yeast, set aside to activate

  2. In a stand mixer beat 4 eggs with the sweetener until no longer grainy

  3. While that whips, weigh/measure, sift and whisk together dry ingredients

  4. Once you can't feel any sweetener granules, on low speed, stream in the melted butter and heavy cream and yeast mixture

  5. Scrape down then add in all the whisked dry ingredients, turn on slow then speed it up to work the dry ingredients well

  6. Scrap down and whip one last time until a thick dough forms

  7. Set aside to hydrate and make the filling by mixing all the ingredients together until a cohesive mix forms, set aside

  8. Roll out using a large piece of parchment paper or a silt pat (still need to oil), can either coat everything in oil or bamboo fiber to combat the stickiness of the dough

  9. Roll out the dough into an even thickness, in the shape of a rectangle using an oiled spatula or hands, about 14 inches horizontal by 10 inches vertical, can use a piece of parchment paper on top as well

  10. Once you are happy with the shape and thickness of the dough, and the filling is cool, mix the sweetener and extract into the strawberries, then spread evenly across the dough, leaving a half inch at the top

  11. Roll the dough from the bottom, tucking the center in tight all the way to the end, roll off the parchment, then back onto the seam, if dough is too soft you can place on a pan and put in the fridge for 10 minutes

  12. Spray and line a 9x13 pan with the piece of parchment paper

  13. Cut the log of cinnamon rolls in half then in half again then into thirds to form 12 rolls

  14. Place in the 9x13 pan evenly spaced 3 by 4, cover with plastic wrap and proof either in a dehydrator set to 105 or on the stove top with the oven preheating to 375 degree with the warm air circulating around it until they are double (not much space left between them) in size 60-120 minutes, can also use a heating pad on bottom and wrapped around

  15. If using a dehydrator, make sure to preheat your oven once the cinnamon rolls are close to doubled and bake for 16-24 minutes, check at 14 minutes because all ovens vary widely, you do not want to overbake, they should still be soft and golden brown all around

  16. While they are baking you can make the frosting


Strawberry Frosting:


28 g/2 Tbs. Salted Butter (softened)

112 g/4 oz./1/2 Cup Cream Cheese (softened)

80 g/2/3 Cup Alternative 1:1 Powdered Sweetener (sifted)

1 tsp. Strawberry Extract

1 Scoop Perfect Keto Strawberry Collagen Powder (can use any brand collagen or MCT oil powder)

Instructions Cont.:

  1. Mix together the butter and cream cheese with a spatula or hand mixer until just combined

  2. Add in the strawberry extract, the powdered sweetener and Strawberry powder and mix until just combined

  3. Once the rolls are golden brown and spring back when touched pull from oven and let cool until they can be handles easily

  4. Spread the cream cheese icing on each roll, separate from each other and the sides and enjoy!

  5. Can be stored in the fridge for two weeks or freeze for 2 months, they are best warmed in the microwave for a few seconds
